I have searched the boards to no avail.....does anyone have a yummy mud cake recipe? Of course I would need the conversions for U.S. mesurements! Ive read they are very sturdy cakes and would like to try one! TIA!

This is the BEST choc mud cake I've ever tried! Got it from a book called 'the essential guide to cake decorating'. I've noticed that Planet Cake uses a very similar recipe in their new book, but I prefer this one (and it is the original)
This is for a 9" round or 8" square
220g butter
220g dark choc
4 tsp instant coffee
160ml water
125g self raising flour
125g plain flour
50g cocoa powder
1/2 tsp bicarb of soda
480g caster sugar
4 eggs (lightly beaten)
7tsp vegetable oil
110ml buttermilk
melt the butter, chocolate, coffee and water in a pan on a low heat until combined then remove from the heat
sift the flours, cocoa and bicarbonate of soda into a large bowl and stir in the sugar and make a well in the centre. Add the combined eggs, oil and buttermilk and the chocolate mixture, stirring with a large spoon until completely combined.
Pour into a lined tin and bake for 1hr 45 mins. A skewer inserted into the cake should come out clean, though it may be alittle sticky. Leave the cake in the tin until it is cold.
