Hi All!

I am such an idiot!! I just found out that I have been measuring my powdered sugar wrong. I have been using 2 cups of sugar thinking it was 1 pound. It is actually 4 cups of sugar that equals 1 pound.

Anyway........ I ALRAEDY made my icing (Chocolate) 2 weeks ago. It is currently frozen. I will be taking it out tomorrow morning to defrost. Since I already made the icing, can I ADD the 2 cups of missing sugar to it??? Will it affect the icing in a negative way? I normally re-beat my icing before I use it; I was thinking I would just add the sugar when I re-beat it.

Tips and suggestions are appreciated....

=)

I'm sure you can add it after it has defrosted.

Yes, go ahead.......and beat it slow for up to 5 minutes. It should come out creamy and not grainy.
