Hi all, i watch ace of cakes and cake boss. i'm wondering what kind of cake batters they use, i know they make it, but how can they pick up an entire sheet cake and not have it brake? it doesn't seem like they can be that heavy and be good at the same time.

I just assumed it was on a board. I know that Buddy uses a lot of Pound cakes.

That would be interesting to know. I always assumed they were using cakes that had been frozen, since they moved them with such ease, until I heard/read that Duff never freezes cakes.

Or they are just really good at moving cakes! icon_biggrin.gif

You do get good at it with lots and lots of practice but I bet the pound cake is what they use. AOC's cakes look very dry to me and more on the pound cake side also.
Keeping the cake cold does help some.

Buddy definitely freezes his cakes. I took a class once at his bakery and he explained that they always freeze their cakes as it makes them very moist. While he was demonstrating some of his designs, he used cakes that had just come from the freezer.
