Are their any vegan and raw vegan cake decorators or pasty chefs planning to attend the ICES chicago convention. I'm planning to go with hubby, 2 other vegan cake decorators and 1 raw vegan chef.

We are all from NY. We would like to meet with you during the banquet and maybe get together for coffee, breakfast or dinner at least one time during the ICES convention to share raw vegan cake recipes and ideas making raw vegan wedding cakes? Hope to year from you.

I'm not going to ICES, but the idea of raw vegan cakes are intriguing. Are there books out there with cake recipes?

Here are some books my coworker that owns the raw vegan bakery recommends:

Living in the Raw Desserts by Rose Lee Calabro

Sweet Gratitude: A New World of Raw Desserts by Matthew Rogers

Raw Food? Real World by Matthew Kenny and Sarma Melgnailes

Also check out any raw vegan website recipes? My friend that is a raw chef graduated from the Living light Culinary Institute from northern California. I think it is raw vegan culinary school.

Since NY has so many bakeries we specialize in Raw vegan cakes especially for weddings.

Can you please give quick description of how to accomplish a raw cake? I thought raw meant no heat processing so I have to ask ...HOW in the world? I would really like to know! I do vegan but...raw cakes?

You tube is another great reference to see how raw vegan cakes are made.

We also notice a trend in green weddings and lot of bride and grooms that are into raw vegan diets prefer this kind of cake.

Ok, I youtubed it. Very interesting. Seems like it would be the raw version of flourless cake, kind of that heavy dense feel.

I am going to get my raw cousin to make it for me next time i visit.

I had a question: you mentioned in an earlier post that you didn't want to do any gumpaste becaues of the vegan/raw belief.

what is it about gumpaste? is it the egg whites?

It's probably the gelatin in the gumpaste to avoid...I found out that SatinIce is vegan, though, so you could make gumpaste with that and it should be okay. Just check the ingredients to make sure they haven't changed it recently. It was vegan the last time I checked!
