Sounds great Adrian! Maybe add the link to this thread to it. I hope you get lots of responses. I think it's fun to experiment with different recipes. We may not care for all of them but we might also end up with a real winner!

This recipe sounds like the Earthquake Cake. You line a pan with walnuts and coconut flakes and then pour German Chocolate cake batter and then plop some cream cheese and powder sugar mix into the batter. It tastes heavenly. The only problem I can imagine with the cupcakes (it is a problem with the cake at least) is that you can't really do the toothpick test for doneness because the center is gooey. Is this correct?

When I made these I read the recipe as directing me to put the filling in and then bake them, so that's what I did. The chocolate chips get really melty that way (and I noticed there wasn't really a coconut taste - perhaps it just helps the filling taste richer?). I did the toothpick test just kinda off-center as the filling was just in the middle.
I agree that it is very similar to an earthquake cake! And yes, you do add the filling before you bake with this recipe, similar to the earthquake.
You are right Adrian! I stand corrected! I guess I was focusing on the nuts and coconut sprinkled on the bottom. I didn't really taste the coconut either.

You know Grandma, I haven't because I've been so busy, but I just had a cancellation for next week, so I might slip them in.
You know, I've been a bit distracted... my mom lost her job after almost 30 years with her company. At first she was really upset, but then when she told me 'the deal' I had to b-slap her into reality and now she's ecstatically happy. She was going to retire next March (2010), but they cut her at the end of last week (Friday, I think?) and the deal is, she gets her regular paycheck until August 31st, then she gets unemployment for 39 weeks, then she retires! She'll actually be getting paid longer than she had originally planned! So, she essentially gets more than the next year off WITH pay! Then she proceeds with her regular retirement plans. The part that upset her was the whole being kicked out of her office thing. But they love her there and she is welcome to come visit any time. She's even planning on still taking them treats once in a while. But I'm upset because I've essentially known some of these people since I was a tiny kid... I have to keep in touch with them in other ways now!
Sorry for another off subject rant. You can always count on me for that.
ETA: She didn't do anything wrong to be 'fired' she was downsized because they were doing a 20% across the board cut, and her job was less essential than some others. They had to make tough choices, and none of them wanted her to go... but what are you gonna do? Anyway, thought I'd clarify that.
That's what we're here for Mel. Your co-workers become your family some times. When I retired from barbering it was my decision but I had clients of 20 years and a work family for 10. It was very emotional. I bawled like a baby. It turned out to be the right decision in the long run though. I went into business with my husband and was really busy right off the bat and it kept my mind occupied trying to learn the ropes. That's the key!
I guess I'll give people a little bit longer to put their numbers in since I said I'd give em until Friday AM in that new thread I started...but I may get impatient and made that 12:01 AM GMT or something, haha! I can't wait to see what we get to make next!
I'm also going to make a cake for my Tuesday night Wilton fondant class. I think I am going to do a lemon and fill it with this lemon merengue pie pudding I found...sounds yummy to me! Then there's V-Day, I think I'm making cookies...oh yeah and dummy me entered my first competition for the 28th (novice division, but I'm still kicking myself), so I better get away from the computer and busy in the kitchen! Wish me luck!

I have a question about these cupcake recipes. They all look great, but I was wondering, are these recipes specially designed for cupcakes or will they make great cakes too? I didn't know if baking them in their small pans has to do with the composition of the recipe. Like, they add more of something or omit something because it's a cupcake. If anyone knows, or has ideas please jump in. Thanks.
That's a great question! I know you can make cupcakes from a cake recipe but I can't even find any info on how to make a cake from a cupcake recipe! I would think it would be the same.

cuteums, I have to agree that it should work either way! I make my cupcakes out of the same batter as my cakes, so I can't see how it would make a difference. If anyone else knows better, jump right in and tell me how stupid I am! Hehehe.

Not to turn this into a discussion about Jan, but I have to add this... when I first saw her do that, I was like, "Is she mad??" like, I didn't know if in her head she was thinking, "You idiot, if you'd just open your eyes and look, you'd see this was already discussed here, here, and here!" but I quickly realized she is just painfully organized and knows how to get you the info you need quickly. Now, if only she could do that with my toy room...

Hey once you get it down to a science you can whip up a batch of cuppies in no time! I work out of my home and I got used to mixing and baking in between working! That's what us women are used to aren't we? Multi-tasking!
I just made these cuppies and they were very rich. I loved the chocolate flavor, but the cake itself was a bit dry. I liked the coconut, it added a nice sweetness to the filling. I bet they would be really good with either white or milk chocolate ganache! mmmm.
Hi. I'm a newbie, but SOOO addicted to this sight. I experimented with an idea and it turned out pretty well. I made a devils food cake mix and placed a marble sized truffle in the middle and baked it as you normally would. Frosted it with a Swiss Meringue Buttercream-it was light chocolate and just melted in the mouth. The truffle melted and was a gooey little surprise.
I'm a nurse and use my co-workers as guinea pigs-one of them hunted me down to comment on these cupcakes and ask how the "stuff" in the middle came to be.
