I'm going to be making a small Mardi Gras cake and want to know how to figure out the pattern for putting a diamond pattern out of fondant on the cake. I've looked at tons of cakes here and they all look so good, the pattern matches really well.

Can someone tell me the trick to doing this?

Use a cookie cutter or pattern to cut each diamond out.
OR do you mean the embossed pattern? There is an impression mat for that. OR you could get a piece of plastic that is used to cover florescent lights -- that's av ailable at HomeDepot or such type stores.

No, not the impression mat. I meant just putting the diamond pattern on the fondant. How do you make them come out so even around the cake as to not over lap each other.

I use the three diamond quilter on fondant cakes, works great and it's easy. You can space it towards the back so they join up perfectly.
