Regarding your stiffened buttercream damn ...
I like a little extra filling in the middle of my cakes and was just wondering if I were to add a second layer of stiffened buttercream (e.g. pipe another layer directly on top) if you thought it would hold up ?

Well I'm not SugarShack but my opinion is: don't do it.
Instead, torte your cake into more layers and put in more, thin layers of filling.
The thicker the filling (unless it is b'cream) the more chance of it 'squishing' out even w/a stiff dam.
