What Types Of Pans To Buy?

I'm getting serious about baking cookies for others and my cheapo pans are just getting so beat up. Consequently, I am thinking of moving up to professional sheets.

Does anyone recommend any specific brands, sizes or sites?

From what I've read, everyone recommends 1/2 sheet thick/heavy aluminum pans and huge rolls of parchment. (1/2 sheet for freezer and fridge use)

I'd appreciate any help or ideas! Thanks in advance. icon_smile.gif

Welcome to Cake Central. If you have a restaurant supply store near you, the basic 1/2 sheet pans are under $10. Also, you can buy parchment in a box of 1000 sheets, full sheet size. cut in half, that would be 2,000 1/2 sheet pans. And, it can be reused for most kinds of cookies. The box is $30-$35 dollars, less than .02 per 1/2 sheet.
