I have a request of a graduation cake with scoops of ice cream on it.

I remember seeing a Food Network Challenge where the designer added something to either buttercream or white chocolate to give it the right consistency to "scoop" out and have it look just like ice cream but for the life of me i remember exactly what she did.

Does anyone know or have an idea of how I can achieve this?

Thanks in advance icon_smile.gif

I dont' recall the show, but couldn't you just add more p.sugar to make it really stiff/thick, suitable for scooping?

This was on the Candy Castle Challenge. I think she used candy melts, but the only thing I remember her adding was water. She kept stirring it then at some point when it thickened she scooped it out. It really looked like a scoop of ice cream! Then she put the scoops on tops of the castle towers and an ice cream cone on top of that. She won the challenge, too. I'm sorry I don't have more info for you. Good luck!

Candy melts and water...just be very careful when adding the water. If you add it to fast the chocolate will seize!
