I recently saw some nice heavy duty non stick cake pans with sharp corners for only $10.00 a piece at Walmart. Are non-stick cake pans ok to use?

Yes they are. But you still have to grease them.

2" deep cake pans are generally considered standard for decorators.

Anything shorter, and you're limited to making cake mix sized cakes.
