I am working on fondant roses for my class cake, and my lavender turned to blue. Is this normal? Is there something I can do?

It is very common for lavendar to fade to blue or grey. You can re-color it with lustre dust or "paint". It can help to keep it from the light as much as possible.

It's the sunlight/flourescent light. Anything with red in it will fade unless it's kept covered. icon_sad.gif
