Ganache & Refrigerated Cake

Hi - I am going to bake a cake tonight, refrigerate it till Wednesday morning and then place the ganache on the cake.

Will the ganache discolor because of the cake being cold & will it still stay shine?

The ganache should stay shiny. You can add a bit of corn syrup to help the shine and pour smoothly.

If you refrigerate the ganache after it is poured, it will not be shiny.

Are you frosting and filling the cake with something perishable prior to glazing? (If not, refrigeration is not required.)
