Preferences: Fondant, Marizipan, Gumpaste

Hello all. I was just out checking out the new photos and I started wondering what the different preferences were when sculpting figures and such: fondant, gumpaste, marizipan. I have never used marizipan, not sure how to color it actually, not sure where to get it, etc.

What do all of you prefer to use and why? Is there much of a cost difference, taste difference, etc.

gumpaste dries harder, but faster. rolls very thin for delicate flowers

Fondant dried slower and not quite so hard.

50/50 gumpaste/fondant works well for sculting and drapes more time to manipulate the 'dough'

marzipan stays fairly soft, good for small items. Made from Almond paste. you can ready made marzipan or make if from almond paste.

all can be colored with food safe colors, liquid, gels, paste or powder.
