I would like to make a rum cake. I've only ever seen them done in a bundt cake pan. My question is, is there anyway to do a rum cake as a layer cake, or will be final result be too wet? I would like to cover it in buttercream if possible.
Thanks!
I just use a regular cake mix, and sub part of the water with rum. Works just fine. The amount of rum I use is "to taste", so you might want to experiment with a couple to find the right level for your taste. It may also depend on the rum. The kind I used, my hubby brought back from Jamaica 20 years ago, so it was not only super authentic Jamaican Rum, but it was well aged!
Brides who have ordered rum cake have selected apricot filling (I use the sleeve filling) or pineapple-apricot (combo of two sleeve fillings).
