This is my mother’s recipe. I won a blue ribbon at the county fair with it. People say there is a fruity, almost cherry flavor to it, but I don’t taste it.

Looks like a great recipe... but your comments are what really made me smile. When I was growing up, my mom always made what I considered the best chocolate cake with a chocolate/cherry icing.
As I grew up and developed my interest in baking I learned all the truths - it was a chocolate mayonnaise cake (that's why it was so moist), which I still make today - AND, her icing was always chocolate, flavored with (here it comes)... ALMOND EXTRACT. Turns out many people think almond extract has a cherry taste to it. Who knew?
I love almond extract, although I now use an almond emulsion that is even better, and I use it in so many things. To me, and to some others, I still taste a strong hint of cherry! I have trained my taste buds to know better, like I trained them to know cilantro really doesn't taste like soap, but there is always that memory of chocolate/cherry icing.
