Pretty In Pink
We were asked to create a cake for The Knot Magazine. The brief included a 3 tier cake, one tier with ruffles, in baby pink and inspired by fabric... and this is what I came up with. The pattern on the middle is handcut and the ruffle on the bottom tier is inspired by a skirt that I stumbled across online.

The colours on this cake were inspired by the colour palette for the day inclusive of dresses, flowers and decorations. The 2 roses are actually peach - they look quite orange in the photos. Both are handmade. Raspberry Ripple for the top and double barrel bottom tier with Vanilla White Truffle ganache

Corporate Cake For Two Sugars
Two Sugars is a Sydney Based cafe and i was asked to make a cake for their 1st birthday celebrations. Lactose Free Dark Chocolate Mud with Lactose Free Dark Choc Ganache The cafe uses red cups and saucers in the same shape as the handmade version on top of this cake. The cafe's logo has been handpainted in edible ink onto the side of the cake. The coffee beans are real beans.

A Very Retro 40Th Birthday
I created this cake for a very good friend of mine and a fellow caker Nicci from Cupcakes in Camden. She is a Kiwi with a passion for everything retro and whimsical and has a dream of selling cupcakes out of a retro caravan! Red Velvet with white choc ganache top and middle tiers and White Choc Mud with homemade pistachio paste and rosewater white choc ganache for the bottom tier. The peals on the top tier, mosaic on the middle tier and all floral, pinwheel and cupie dolls on the bottom tier are handcrafted and edible. The caravan topper and the figurine of Nicci is a combo of styrofoam and fondant.

Blue Bird Wedding
This cake was extremely heavy! All tiers were mudcake. Dark Choc Raspberry for the top and bottom tiers with dark chocolate ganache and the double barrel centre tier was a white mud filled with Croatian Plum Jam, Walnut Paste and White Choc - based on a traditional croatian recipe "Orehnjaca" (walnut roll). The bluebirds appeared on the wedding invitation and were cut and handpainted. The top tier is made from long strips of overlapping fondant and the bottom tier consists of LOTS of handcut, thinned and folded petals.

I came up with this design for a recent photoshoot. The edible leaves on the top tier were based on a baby shower cake design that I had also done recently. The middle tier was handpainted and the bottom tier is inspired by Jill Rosenwald - but every piece of the pattern was handcut in fondant with an exacto (had no success making a cutter to replicate the design!) The gardenia is handmade - a huge thank you to the amazing Jacqueline Butler from Petalsweet for teaching me this one! The flowers on the mini cakes are also gumpaste and Jacqueline inspired.

Luca's Miner Smurf Birthday Cake
Luca wanted a smurf cake based on the Smurf Village game/app. His fave Smurf is Miner Smurf. 10" Vanilla Cake top tier with dark chocolate ganache. This tier tier stands 4 inches tall. 14" White Choc Mud with Raspberry Ganache for the bottom tier. This tier stands just over 5 inches tall. Aside from the picket fence, everything is edible and 100% handmade
