I took my favorite vanilla cupcake recipe, mixed in about 10 crushed up cookies and, then took my favorite IMBC recipe and, mixed in about another 10 crushed up cookes and topped with a 1/2 oreo cookie.
Of all the flavors and combos, there really is nothing that beats a vanilla cupcake with vanilla IMBC in my humble opinion. I added some Lime Green sugar pearls.
My friend's mom turned 60 this week and, she wanted to give her a special sweet treat. This is my first time working with fondant so, I went with a simple cut-out. The cupcakes are Red Velvet and the frosting is vanilla IMBC (they didn't want cream cheese)

This is an Oreo Cupcake with Strawberry Italian Meringue Buttercream topped with a 1/2 Oreo. Not the prettiest cupcakes ever but, taste was great. I used a sieve to strain my strawberry purree but, will use cheesecloth next time as, many seeds remained giving the icing a speckled look that I didn't like. On the flip side, this icing would be AMAZING for piping a realistic brain decoration!!! LMFAO
Here we have a coconut cream cupcake filled with pineapple curd. The icing was french buttercream and, I flavored the cherry topped ones with coconut/pineapple (for kids) and the pineapple topped ones with Malibu Rum (for adults).
Chocolate Peanut Butter cupcakes with Peanut Butter icing and, a chocolate peanut butter ganache drizzle.
So light and delish!!!
