Topsy Turvy Baby Shower
Client asked for topsy turvy cake in green and pink to match her invitations (had owls on them). This is one of the 1st cakes that caused me major issues. Usually I make all my topsy turvy cakes with choc mudcake and dark choc ganache and they are super stable. This client wanted white choc mudcake with white choc ganache for top tier. I ended baking the top tier 3 times as white choc ganache was just to soft and cake kept sliding). I was so flustered in the end I even forgot to dowel the bottom tier (has 1 stabiliser dowel thru middle only). Lukily it all worked out well in the end and it held in place for the 30 min car ride to deliver it.

Rose Wedding Cake
I have received a lot of e-mails asking how I did made the swags and brush embroidered roses, so I thought I should post it for everyone to see :) SWAGS: The swags from fondant mixed with CMC powder. I attached them to the cake using edible sugar glue made from CMC (tylose powder) and water. BRUSH EMBROIDERY ROSES: I used royal icing for the brush embroidery roses. It was Wilton recipe. Wilton also have a recipe with meringue powder however I have never tried this. I copied the design onto the sides of the cake and then piped over the traced lines. Using a damp paintbrush I brushed the icing into the centre of the flower. I love the look of brush embroidery. ROSES: I made the roses from flower molding paste I purchased from my local cake decorating store. To tell you the truth I didn't like it very much. I have never used gumpaste but it would probably be better. COLOUR: White and Wilton ivory
