I like to roll the fondant out on a large piece of fairly heavy vinyl from the fabric store. (20 gauge is perfect and is only about 3 or 4 dollars a yard) Then I pick up the whole thing, turn it over carefully while the fondant is adhering to the vinyl and center it over the cake. Put it down carefully and peel the vinyl off the fondant. It really helps with a cake this big, if you can do it with another person, so I try to do the big ones when my husband is around.

Hope this helps.
