Getting Frustrated With Filling!

All of the fillings I enjoy using are perishable. I've heard so many different opinions of when a filling should be refrigerated, how long it should be left out, shouldn't be outdoors, etc. I do NOT understand it but I know that it makes me nervous making anything w/cream or milk knowing that the cake may be left out several hours.
Which leads me to my question, does anyone have any good filling ideas (other than BC) that do not require refrigeration???

There are plenty of options that are made by CK Products....they come in 2# sleeves and don't have to be refrigerated. Your local cake supply store should carry them!

How about canned fruit pie fillings? I use cherry and strawberry a lot...they're yummy! I haven't used any other "cream" fillings aside from BC...but I have flavored it with cocoa for chocolate BC and it was great!

I like mixing the Italian Merginue BC w/raspberries preserves, nutella, chocolate, strawberry preserves, lemon curd etc. I know it is BC, but the ital. merg. is SOOOO much better than reg. BC. And works great as a filling. You can do quite a bit w/it.

Oh and the premade fillings in the sleeves. LOTS of options w/those. They are pretty good and resonably priced. I LOVE the choco bavarian creme!!

Hey mama! I'm in Irving, so we are neighbors!!

I am with you on the perishable issue - I don't even like to use milk in my icing because I don't want to risk any spoilage.

I have used preserves (strawberry, apricot, etc) as filling and have never had a problem with an unrefrigerated cake.

I have also used mousse and pudding, but I tend to refrigerate those until delivery

I'm really looking for something that can be made at home, rather than purchased in sleeves (can't EVER find that stuff).
I've heard alot about IMBC but doesn't that need to be refrigerated?? I'm in TX so the idea of something perishable is an issue a majority of time. Even if you refrigerate up until delivery, what about when the cake sits around for a couple of hours. And you know cakes don't always get put up when they are supposed to?!

No, the IMBC doesn't need to be kept in the fridge. That is what's so great about. I usually make on batch of icing to use just a filling. It lasts for awhile.

And I can't really get the sleeves of filling in my area either. I buy them online

I don't have a local cake store that sells the cake fillings and I never have room in the fridge for a cake, so I have found a few things that work well out of the fridge. icon_smile.gif

Preserves - Raspberry or Strawberry. You can even blend them together or mix them with buttercream

Ice cream toppings - Chocolate or Carmel. You want to make sure it is thick though. Some toppings are just too thin and runny.

Nutella, Lemon Curd (from a jar), pie fillings
