Is ganache supposed to be poured OVER your regular icing or used INSTEAD of regular icing?

Instead of regular icing b/c it's so rich. I haven't had any problems smoothing ganache. Some people frost first so the ganache will have a smoother finish. I would go easy on the frosting or the combo will be too sweet. good luck!

I always put (chocolate) icing underneath my ganache. The reason: If you torte your cake or use two layers then you will have dips in the side of your cake. When the ganache is poured on then it will form along those dips. If you are pouring it you want it to have a smooth surface, like when you do fondant on a cake. Any imperfects will show.

If you are letting your fondant thicken and using it whipped, then I guess you really wouldn't have to use icing under it.
