Need Help With A Family Reunion Cake

I have my families 50 year anniversery in the U.S. comming up and its my job to make a wonderful cake for 70 people. I'm thinking a 14in round two layer chocolate and yellow cake with canolli cream filling. I want to use whipped cream instead of buttercream. My first question- Can you color whipped cream icon_confused.gif ? I want to do transfers of the Statue of Liberty in the center with the Italian flag on one side and the American flag on the other made of chocolate. My second question- can I freeze the candy melt tranfers and for how long? I know there is an article on tranfers does anyone have the link for chocolate ones. Also is this enough cake for 70 hungery italians, not those tiny pieces they serve at weddings icon_wink.gif .

The only place I have seen how to do chocolate transfers is in the Whimsical Bakehouse cookbook. Maybe someone else knows where else to find it online.

According to Wilton's website, a 14-inch 2-layer cake will only feed 63 people, and they use small slices, so you may want to make more. Here is the link to their serving amounts:

Sorry, I don't know if you can color whipped cream.

A 16" round will serve 77 according to Wilton, but if it's your only dessert and you're worried about enough, you could always make an extra sheet cake just in case! You wouldn't have to decorate it as much as the main cake. Really though, I have Italian in-laws and let me tell you, someone will bring the trays of pinoli cookies, and some cousin named Carmela will bring an italian liquor cake. So don't worry too much about your "American" cake! Wow, do I sound bitter or what?

If you are using a "fresh" whipped cream (heavy cream only with some vanilla and sugar) It will not take color very well. I use whipped cream as a frosting on at least 60% of my cakes and I have tried coloring it with food coloring and its not great. You can however, spray it with the color mist spray.

Well I do have 2 cousins named Carmela and it is my middle name, so of course I have to make sure everyone gets their fill and then some. And I'm sure One of the 5 Maria's or my Uncle Tony or one of the Paul's will bring the canolli, ricotta pie and italian cookies. I can't explain why it's in the genes or its called insanity. Well aren't we all alittle insane at times when we do our cakes icon_biggrin.gif . I may have to make another cake.

2boysmom, that's too funny. My daughter is a Maria Assunta and my son is a Giuseppe. If I have another boy someday, I'm going to name him Jesus so I'll have my own Holy Family. All of my parties have turned Italian, and I'm not at all! I grew up that if something ran out it meant it was good! Now, if I run out it means I should've made more!

LOL, my name is Rose so, I don't think I need to add more to this already familiar conversation!LOL!

I think your idea sounds great. Was it one main couple that came over that you could get a picture of and edible image it on a 4X6 piece and include it on the top? I'm not sure about the chocolate being frozen, that may cause it to "whiten". Not sure just my guess.
Gingoodies commented on the color, their right, the color will stay sorta pastel and not really deepen.
Please post when you do and enjoy your family gathering, it's something to celebrate.

I am very excited I printed the top of the cake and practiced with the candy melts. I just need to buy some piping tips and I know it will be ok.
