I need a bit of advice on fondant. I'm making Liz Marek's fondant, which always seems to work pretty well for me. The thing is: I need to make a several colors including brick red and "ninja turtle" green. Since I don't make many cakes, I only want to make one batch of fondant plus I don't have a ton of food coloring. What is the best method to use to get these two colors, among the other easy ones? I have some Americolor gels, but I have never been able to get a good dark red with them. What else should I try?

AIf you are going to need some deep colours, I recommend buying ready made fondant in the colour you need. If it's still not close to your colour you can add some colour to deepen it. The reason I'm saying this because fondant can lose its consistency if you add too much colours and if you then add powdered sugar or cornstarch to dry it up, it goes too dry. I'm telling you this from my personal experience. It's very hard to achieve the deep red colour you are after if you are starting with white fondant. It will end up being a dark pink colour. If you still want to try your ready made fondant, I suggest making a batch and trying to achieve your colours beforehand so you have time to fix any issues you might have. This will save you a lot of unnecessary stress. Good luck! :)
