AIm getting slightly confused with serving sizes. In total there is: 1x 8" by 5" (round) 2x 6" by 4" (round) 1x 9" by 2" (square) Im wanting coffee serve size :) Also I should ask how do I go about cutting and serving the 9" by 2"?
AMy bride has had to change her cake design as she couldn't get the venue she was after and is now outside in summer, plus she is limited to a height of 15" where she wants to display it. She needs to serve 70-80 people. So has asked if she could have a two tier cake for cutting and display, a square cake out the back as well as a gluten free cake. So there will be one 2tier cake (8x5 and 6x4) And out the back there will be a 6x4 gluten free and a square 9x2

AThe 6" and 8" cake will serve 36 according to Wilton.
The 6" gluten free cake will serve 12 according to Wilton.
The 9 x 2 will serve 25 according to Wilton.
That is a total of 73 servings.
Assuming the Wilton standard is being followed (1" x 2" x 4" - or 5" with your one tier) then the 9" x 2" cake should be cut in 2" x 2" x 2" servings. That way everyone has 8 square inches of cake.
My only comment on this is that people will be able to tell who has the "wedding cake" and who has the "kitchen cake". When I make kitchen cakes I make them 4" tall with 4 layers of cake and 3 layers of filling - just like the wedding cake. That way guests don't start comparing and wondering why the cakes don't match.
