Made The Cake For The Wrong Date!!

Ok so I made this cake for this week but it was supposed to be made for next week.

It is a deep dark chocolate cake with fresh whipped cream and fresh strawberries covered with fondant.

Can I put it in the freezer? Till next week?

I assume not because of strawberries??

I think you would have to scrape off the whipped cream and strawberries and then freeze the cake part.  There is no way the whipped cream and strawberries will survive in the freezer without turning to total mush.

Ajust depends on how you whip your whipped cream and how juicy you berries are -- as we all probably know if we whip cream too long it becomes butter right-- so I whip mine to just this side of butter -- I start the mixer on slow to get all the molecules engaged and gradually ramp it up --

so there's no random water in there to freeze and thaw and moosh out -- and for strawberries -- I use washed dried berries cut with a very sharp knife to reduce/eliminate weeping --

then most importantly I've tested this freezing and thawing and I know this works for me -- but I only freeze uniced tiers -- because in 40 years I've had one success and one fail with freezing a finished cake -- so I just don't go there

so it's a definite maybe
