I need to put together a number one cake that feeds 40ppl. The wilton pan does not feed that many so was wondering if anyone made one about this size and what pans did you use? Or how did you cut and piece together to make it enough for 40 ppl? TIA!
For 40 portions I would use 2x 10" square cakes and cut as shown in the picture, but all my cakes are 4" tall. If you didn't want so tall, you could start with a 14" square and make your cake 2" high only, and this would give you around 40 portions too.
Bear in mind there is some waste here unless you slightly redesign the number 1, so you need to take that into account (2 of my 10" squares would be 50 portions according to Wilton, but it looks like I would lose around 10-12 according to how they have cut the pieces to make the 1). Perhaps charge for 50 portions, start with a 2x 10" layers, and that way you take into account the additional "starting" portions, the cutting, sticking, and PITA crumb coating and covering in fondant for weird shape cakes.
They will end up with 40 portions, and you will have charged for 50.
