70-90% Humidity In Walk-In Cooler - Is This Normal?

Hi,

Is 70-90% humidity in a walk-in cooler normal?

I found lots of humidity threads here, but none with specific measurements.

 

Most people mention sweating when fondant cake is removed from a walk-in coolers. Our cakes sweat while the cake is STILL IN our 8x16ft cooler overnight. In fact our fondant melts over 3-5 days if left in there. We carefully open the cooler 10 times/day.

 

A purchased monitor recorded over 48h that temperature cycled between 2.5-7.5C (36-46F), and humidity between 70-92%. I'm in Toronto, Canada and the same monitor recorded the building temp and humidity at 25C (76F) and 49% respectively.

 

Also, the bucket meant to collect water has never been emptied over the cooler’s first 4 months of life.

 

The manufacturer feels this level of humidity is normal. What do you guys think?

We've identified drying strips but they won't ship to Canada. People have talked about dehumidifiers, but this would be a retrofit for us and I'm not sure how that would work.
