Sponge cakes rely on the air trapped in whipped eggs for rising. 

 

What if you make a meringue and add the dry ingredients to it. 

Cooking the egg whites and whipping them up to glossy peaks. 

Has anyone tried it? What's the texture? 

Kind of like, making a swiss meringue (minus the butter) and adding the other ingredients.  Would it be more airy?
