I know it is not really time for Strawberry Layer Cakes, but my daughter wants one for her birthday party - this weekend!  I was going to do two layers of classic sponge, a filling of strawberry (stabilised in some way with a glaze, or jellied) top that with a layer of whipped cream, and decorated with whipped cream (stablised) and strawberries.

So I have two questions.

1.  How do I make the strawberry layer part of the cake?  I was thinking of using jelly powder to set the strawberries - as anyone done this before.  I can't afford the strawberries to bleed (the cake has to be made the day before), hence the reason I was going to jello-ify them.

2.  I have a recipe for stablised whipped cream - any pointers or better recipes?  I have never used stablised whipped cream before.

Any help would be greatly appreciated!

I have used this recipe before - 12 oz strawberry preserves and 5-6 strawberries chopped. I added a little sugar for sweetness. I piped a dam of wilton stiff icing around  the layer before stacking and put the cake in the fridge. Hope this helps!

AMy favorite strawberry filling is white chocolate mousse & fresh strawberries. I pipe a nice thick dam, spread some mousse, lay the berry, spread more mousse.
