Layering white chocolate mud cake for wedding cake

Hi, 

 

I'm just wondering: is a mudcake served without layers, or can I 'layer' a white chocolate mud cake & fill in-between layers with either a white choc ganache or buttercream frosting? 

 

I need to do this for a friend's wedding cake & just want to make it special - not sure which way to go.

 

Also, I will be covering with fondant, so don't want the cake ending up too sweet...

Hello. Yes, you can torte and fill your mud cakes - I do it all the time with probably 90% of my mud cake wedding cakes.

I'd recommend ganache over buttercream, but you can use that too, plus jams/preserves, infusions on each layer, and so forth. I'd recommend you use a firm dam however, to keep it from bulging.

Hi Evoir,

 

Thanks for the reply. I will torte the cake & use a sour cream/white choc ganache as I feel the cake is a bit sweet...

 

Just a question: what do you mean by your recommendation

If your ganache is too soft/runny, it will bulge under your ganache and fondant on the sides of your cake, as the cake settles - both before and after applying fondant. To prevent this you need to create a very firm outer ring/perimeter of thickened buttercream or ganache or cake truffle mixture, in each filling layer.
