How Long Can I Wait Between Crumb Coat And Fondant?

AIm making a cake for my daughter's birthday on Sunday. I don't have a lot of time this week so I'm trying to do as much ahead of time as possible. I baked and froze the cakes today, being Monday. So I want to know how far ahead can I put my crumb coat on? Also is it better off at room temp or in the fridge? I was hoping I could make all the decorations tues -wed, defrost and crumb coat on thurs, fondant and assemble on Friday (at this point it won't fit in my fridge) and decorate on Saturday, ready to go on Sunday...is this wishful thinking? Thanks in advance.

I think your timetable is fine. I like to apply fondant to a chilled cake but there is no time requirement.

 

I like to bake fill and freeze all at once--filling and trimming is always the messiest to me so I like to get that behind me asap and have them all settled into the freezer wrapped in layers like their snuggling in for the winter patiently waiting for me to final coat them at the appointed time--which for me would be Friday or Saturday for a Sunday event. After the final coat I store my cakes in the frige.

 

There's no right or wrong but that's how I do it.

I think your timetable is good. Just make sure the cakes are thawed before trying to ice them, as the icing will crack if they aren't thawed enough. Otherwise it sounds like a good plan! Good luck :)
