I baked a 10 x14 graduation cake Saturday, filled and crumb coated Sunday - was getting ready to finish icing and decorating when my friend called and had to delay the graduatuon party because her other daughter wasin the ER and needs gallbladder surgery,
Question is will the crumb coated filled cake still be fresh enough to serve next weekend? It was half vanilla cake with chocolate ganache filling and half chocolate with vanilla pastry cream. But for the pastry cream (made with cornstarch and egg yolks) I would think of freezing it.

BTW this is a gift not paid but still want to provide a quality product. Any suggestions?

The real problem is not the crumb coat but the vanilla pastry cream.

I would ice and donate this cake immediately. Bake another one fresh for your graduation party when you know that everybody will actually be there--because there could be complications from gallbladder surgery.
