I was so excited today when I finally got a new wholesale account at a cafe until he told me he would need the caloric count for each product bc the health dept checked to see if he had it for certain items during his inspection. I don't even know how to figure that out for my products. I was told I didn't have to have that on my product. Does anyone know how to get this information of if I can find out if he really does need this info to serve my product? TIA

Just get the calorie information from all your ingredients and adjust them from the serving size on the ingredient label to the amount used in your recipe.

Ask if it's an estimate or it is a true nutrition label. A nutritional analysis will cost you about $125.00 each recipe for a basic analysis. For allergy and any health claims, the cost can go up to $250.00 and above.

Wholesale items are handled differently in some areas. Because the baker is not in direct contact with the customer, the requirements are higher. For packaged food (when you seal a bag of cookies for counter sale), ingredient lists are the norm and some areas will require the nutritional label.

Your health dept will be able to answer this and also let you know if you need a separate wholesale license in addition to your HD license, and other wholesale requirements.

Depending upon where you live, some states don't require this info. But the business owner can always decide to offer it, even if the state does not insist. Several of my students who are now in business use this site for doing their own nutrition labels. http://nutritiondata.self.com/ I've also seen registered dieticians advertise for this service charging $50 or less per recipe. Another option would be to go to a calorie counting site (I use My Fitness Pal) and you can "build" a recipe. Enter everything you have in the cupcakes (how much flour, sugar, etc) and then say the recipe makes X number of servings (however many cupcakes your recipe makes). It'll give you a break down of calories, fat, carbs, etc in each cupcake. And it's free.
ETA: If this is a requirement by law though, it would probably be better to go with an official place, rather than this option. But it's an idea.
