I was wondering is is safe to double a Swiss buttercream? I need to frost 50 cupcakes but my recipe barley does 2 dozen.

The recipe I usually use is
4 egg whites
200 g of sugar
250 g butter
2tsp flavor

yes if you have a big enough mixer
