I am making a "cake" for a girl who does not like cake...so she would like a stacked, brownie "cake" covered in fondant. Any suggestions?

I seem to recall that brownie recipes with more eggs turn out a little fluffier/more cakelike although I dont have a specific recipe

As far as suggestions Im not sure if youre asking for how to do it or recipes only so here are my 2 cents worth until someone more experienced chimes in...I dont see why you couldnt stack brownie layers just like a cake, I would recommend supports for sure if you plan on going more than 2 layers since the brownie will tend to be heavier and I would just do a good bc crumb coat and very light fill in between. I would cook the brownies in the size pan you want to use for the cake shape since I dont imagine brownies carving/shaping very well and I would be really sure to use parchment under the brownie batter when baking so you can pull them from the pan without tearing them to pieces. Also I would be sure to use some flower nails in your pans when baking so the centers get done evenly...maybe even convection bake them if you can. As long as you keep the design simple I think you could pull it off.

Thanks Cangela. It is a simple, non stacked cake, covered in fondant. No biggy design wise. I guess you're right - just your standard brownie recipe, baked in rounds...BC & fondant. Easy peesy, right?

Im sure it will be cute! Im the same way, I know I can do certain things but for some reason, just before making it the first time for someone else I get a case of the nerves or begin to doubt myself...donesnt matter if Ive made the recipe 100 times lol. I think its called performance anxiety or something lol.
