Hello all, I am new I have baked cakes in the past for family and friends but know I want to bake for the public. What I wanted to know is the basics. I read about tasting so I asume you bake some cake and have the bride taste them. Well my question is what types of cake do you use. I normally use box cakes cause home made are so dense and people are really not use to them. Any suggestions on how to start out would be very much appreciated.

First you will want to check with your state in terms of licensing and what is required for you to be able to sell your cakes to the public.

Once all the legalities are in order, I recommend mini cupcakes in all the flavors you offer to use for tastings. I freeze them so I always have something on hand for a last minute consultation.

I use both box and scratch cakes depending on the flavor. I doctor the box mixes quite a bit though.

Welcome clarita62! Use whatever recipes/mixes your target market prefers. For tastings, I've made mini-cupcakes or 3-inch cakes (I have small silicone pans) but customers seem to prefer the cute minis. And getting the legalities done will ensure that you won't have to worry. Happy New Year!
