Hi,
I wanted to try decorating my cookies with fondant. What do I put under the fondant? Buttercream? Ganache?
Thank you!
I use a mix of corn syrup and water, about 1/3 syrup and 2/3 water, brush it on with about a 1/2 inch brush. Works great, no taste added. Some folks put their fondant on while the cookie is still warm, no adhesive needed. Others use warmed preserves or piping gel.
In the past, I just brushed with extract then put on the fondant. I have since switched to using cookie icing instead of fondant altogether.
I use a confectioners' sugar glaze flavored to compliment the cookie. I jut brush it on the cookie and lay the fondant on top.
I lay it on while the cookie is still warm. Melts right now and never moves. No problems, ever!
I either put the fondant on while still warm or just brush water on the back of the fondant.
Thank you!
I ended up using RBC and corn syrop.
I'm pretty much pleased with the results ; ) -

I use RBC on cookies a lot, but not fondant, but I figure it would work, I keep corn syrup in a squeeze bottle with a small tip, and I just apply it like glue close to the edges so they don't pick up, and it sticks great. A little tip, I roll it very thin, so I use an offset spatula to pick it up and onto the cookie.
