I've been called to duty by Icing Smiles!! I'm so excited to be able to do this!! However, the child has a milk sensitivty and I have no idea what to sub it with. I usually use cake mix but they want white cake and it contains milk. Does anyone know what I can sub milk for when I bake a white cake from scratch?
TIA!!

I would try almond milk or non-dairy creamer. My personal preference would be almond milk, but I'm not sure how it would effect the flavor of the cake. A little almond flavor in a white cake would be really good. Does your recipe call for whole milk? If so, then when subbing make sure you also account for the fat in the whole milk, which may not be present in your substitute. Non-dairy creamer (like for coffee) may also work. Watch the sugar and fat content in that, too. If there is a lot, it may throw off your recipe. My other thought is soy milk, but that usually has a stronger flavor to it that may not be good in your cake.

Whichever you choose, I would make a test batch ahead of time just to be sure of the taste and that the substitute will work like you expect.

I've never tried these things, so others may have more experience. I do know that the milk provides the liquid and sometimes some fat to the recipe, so as long as those two things are accounted for, you can choose your substitute from whatever other liquid meets your flavor requirements. I'm curious to see what your results are!

I substitute canned coconut milk. I use it in my cakes and bc icing for those with casein/lactose intolerance. But if they don't like the taste of coconut (I for one do not) then use rice milk, almond milk, soy milk or even hemp milk. Ask what milk substitute this child usually drinks/uses then you will know what flavor he/she is used to. Also if you are baking from scratch make a sponge cake, they require no milk/dairy. It is my go to cake.

Good Luck

Oh WOW!!!!! Thanks guys!! I will contact the child mother and ask her what they use for a sub. All these subs sound great to me and I have plenty of time to make a test batch!! Thank you both so much icon_smile.gif
