Light Tasting Buttercream For Wedding Cake

Hi, I am looking for a light tasting buttercream for a wedding cake. It needs to crust where I can get it nice and smooth. Any suggestions greatly appreciated. Thanks Tina icon_smile.gif

I recently switched to using Vanilla buttercream. It's lighter than regular buttercream and has a lovely light flavor. It doesn't taste as sweet as reg buttercream(to me anyway)and it will crust.

1cp softened butter
1cp shortening
8cps powdered sugar
1/2 tsp salt(I use 1/4 tsp)
4 oz Int. Delight French Vanilla Coffee Creamer(I use fat free)
2 oz Whipping crm

I suggest an SMBC or IMBC. They do not crust whatsoever, but they smooth better than any crusting BC I have ever used.

Yeah, Italian Buttercream will not crust, but if you put it in the fridge after the initial smooth, then you can run your scraper over it and get it smooth as glass.

Much nicer icing and tastes a LOT less sweet.
