I would like to do an apprenticeship. But I am wondering if I have enough expericane. I have taken the first 2 Wiltons classes here in Cincinnati, but I want more real work with people who really know how to create beautiful cakes. I am also a stay at home Mom, so I would have to do evenings and weekends.

To get more experience, I am asking close friends & family, and even acquaintences, to be my "guinea pigs" for cakes. Anytime they need one, I ask them to come to me with their idea- I will only change them for ingredients/materials used and minimal hourly rate ($5/hr or so). They get a great deal on a custom cake, and I get experience and a portfolio of work. I take tons of photos before the cake is cut! icon_biggrin.gif I "entice" them by e-mailing all of them a photo (or show them in person) each of the cakes I make for class or practice.

I also am in the middle of taking the Wilton courses, so feel like I need much more information, experience, and practice. I use this awesome website for inspiration, ideas, and instructions for things I haven't learned yet in the course. I've also paid for another online cake-making resource that's been good.

The bakery idea is a great one- but won't allow you to stay home with the babies.
