Chocolate dipped strawberries Question

How soon before using them for a cake can I dip strawberries in chocolate? My brother is getting married and I am making his cake and the bride's cake and I am a little worried about time... I'm hoping I could do them a day or even 2 in advance. Is this wise???

I did mine one day in advance once and they turned out perfectly fine. I left them in the fridge overnight.

I wou;dn't do 2 days. The strawberroes start to sweat and you can see bead of juice. I've done mine the night before. Shelf life is about 24 hours where they still look 100% perfect. After 24 hours I start having problems... maybe its just me...

Please, DO NOT RINSE THE STRAWBERRIES, AT ALL!!!!! Okay. icon_biggrin.gif SO just wipe them off with a paper towel. If you rinse them in water, or wipe them down with a wet paper towel, they will hold some of that water, and that is when you get those liquidy starwberries that break down under the chocolate quick.

I always wash them because not doing so is too germy. However, I buy them at the last minute, wash them and set on baking racks in front of a pretty big fan, blot with paper towel and leave to air dry for several hours. Then I think the trick is not getting the strawberries too cool and not having the chocolate too hot. When the strawberries are refridgerated, it starts the breaking down process and if the chocolate is really hot, that cooks them and makes them juicy.

If you are trying to do them the night before, i suggest you just drizzle them in chocolate and not coat them. I put a piece of wax paper on a cookie sheet, dollop melted chocolate evenly on it, set the berries on the dollops, then drizzle well with dark, milk and white chocolate. Seems like the extra air space keeps them from getting gooey. hope that helps!
