Ok, I'm making a 2 tier cake this week and each tier will be five inches tall because I'm using a 3 inch deep pan and a 2 inch deep pan for each tier. My question is, since the tiers are going to be an inch taller than my standard, do I need to put a board and dowels between the 3 inch layer and the two inch layer? Thanks!
You didnt' say the width of the pan, weight can be an issue.

Anyway, err on the side of caution and board and dowel each tier.
Oh, you're right, I didn't. The bottom tier will be a 10 inch round and the top tier an 8 inch round, and both five inches tall.
No. My average layer is 5" everytime. I don't even do it for 6". Now, when your talking 8", then every 4" there is a board.
You shouldn't need a cakeboard between the 3 in and the 2 in layers but you will want to put a cardboard and some kind of support (dowels, bubble tea straws, etc) between the 10 in and the 8 in cakes. Also, if they will be transported stacked, make sure to put a dowel through both tiers or you may have a problem with them sliding.
