I have searched forums and can't find the answer.. Does anyone know why fondant would fall off of the cake when and after it is cut? Any input would be greatly appreciated I have a client who is reluctant for me to use on her cake, after this happened to her. What could i tell her to reassure her it won't happen?

Are you crumb coating your cakes before you apply your fondant? The crumb coat acts as a glue for the fondant and helps it stick. If your cake is cold or frozen the condensation under the fondant can make it slide also. Hope this helps.

The client said the person who did the cake may have put too much icing? I wonder if that could be a factor?

fondant does shift and come off when you cut the cake sometimes. It can depend on what kind of knife you are given to cut it with and also how dense the cake is and how long the fondant has been on the cake how dry it is and a few other factors.

We offer to cut cakes for some of our events and all the above factor in if the fondant sticks or not.

most people don't want the fondant on the cake to begin with.. the would rather have just frosting. just look at most of the cake plates after a wedding. some people just don't like the taste or texture of fondant and some don't realize that it is even edible.

perhaps make her a tiny cake with fondant cover and let her test it herself or you show her how your cakes can be cut without the the fondant issue.
