I have a Christmas theme cake to ice on Friday and I would like to have the base looking like snow. This cake has to travel for 2 hours. I found a recipe for fluffy icing but it said to apply just before serving. I am in New Zealand and am unable to find marshmallow cream (I live in the middle of nowhere!!) Any ideas would be appreciated.

I have not made fluffy snow, but you can achieve a snow effect by using a white fondant base and covering liberally with edible glitter. It looks like the ice crystals in snow when the sun hits them. The added plus is the fact that it travels nicely.
