I need some basic help with my son's birthday cake. I've taken some cake decorating classes so I have some techniques down. I need some direction on how far in advance you can bake the cake and cover it and where/how do you store it once it's covered. I'm wanting to use white chocolate modeling chocolate as it would taste much better. I'm assuming you can use food coloring to make different colors. Would you bake the cake 2 days before the party, cover it the day before the party? And where would you keep it once it's covered with the modeling chocolate? Is there someone who is maybe willing to "mentor me" through this process.

First of all you havent said what sort of cake you are hoping to make and what filing are you using. Is it perishable filling?

If it doesnt have perishable filliing you should be able to make the cake acouple of days before the event. i have never used modelling chocolate. i am sure it should be like fondant. keep it out. I hope someone here can help you further.

Guess that would have been helpful huh! Just a chocolate cake, no filling. I want to do it similar to the Wilton Circus Carousel Cake (http://www.wilton.com/idea/Circus-Carousel-Cake) without the carousel part. Three tiers I guess. Is each tier one cake pan just smaller in size as you go up? I'll decorate it pretty much the same as the Wilton one I'll just make some icing clowns and put them around on the different tiers.

Yes, you just use different size pans. I would probably do a 6, 8, and 10 unless you have a larger topper. I've never worked with modeling chocolate, I make my own Marshmallow Fondant and I think it tastes really good icon_smile.gif Feel free to PM me if you have specific questions about decorationg, but as I said, I've never done the modeling chocolate, maybe someone else can help you with that part.
