I have two cakes to make. Both strawberry shortcakes. One is for saturday and one for sunday. How far in advance can I make them? I am worried that the strawberries may taste funny if I make them too far in advance.
I was thinking thursday and friday respectively

To me a strawberry shortcake is a sweet biscuit/scone split, filling with strawberries and topped with hipped cream. Generally it's a dessert that's assembled and eaten immediately. is that what you're talking about?

No, what I mean by a strawberry shortcake is a vanilla cake filled with a custard filling and strawberries.

If you mean fresh strawberries in a filling, be careful with making that ahead of time. Fresh strawberries have so much moisture that you run the risk of mold.
