I know this has been asked somewhere before, and most people said they bake Thursday, decorate Friday or sat for weekend pickups but I just wondered how far in advance I could get away with making it. I'm just a hobbyist not a business and have been asked by 2 friends to make a cake each for this sat. One is just a white round cake with a black circle pattern, the other is a leaving cake for a colleague who is leaving to become a dog trainer, the design I haven't yet decided on but I was thinking a paw print with her company logo on. I thought instead of spending all day wed thurs and Fri doing the cakes I could make a start today or tomorrow but I don't want them to go stale or anything. What do you think? icon_smile.gif thanks in advance for any advice

The cake won't go stale if the air can't get to it, once iced.

You can bake today, wrap well and freeze. Pull them out Thursday for filling and settling. Then Friday finish icing and decorate.
