Ganache Under Fondant!

Quick question. Does anyone use chocolate ganache underneath rolled fondant?Or is that not suitable.

It works fabulous under rolled fondant. Very sturdy and very smooth.

Do you use the pour method with that?

absolutely! I just wrote a post about this topic on my blog: truffletramp.blogspot.com
I don't use the pour method-I make a big thing of really smooth ganache and then let it set up to be a smooth peanut butter consistency and then I spread it on the cake like I would BC. After I let it set up I put another layer on and then wait for it to harden and it works great. If you hot knife it after you get a super smooth finish to go under your fondant. icon_smile.gif

Those cakes look awsome, nice edges icon_smile.gif <---- Jealous lol. I was wondering would I be able to do the first coat with poured ganache then add the second with a more spreadable ganache??

I did my first ganache and fondant cake a couple of weeks ago, and I loved the look it gave. I did use the "pour" method and it seemed to work really well for me, of course I was doing a pregnant belly cake so the ganache had a nice, round surface to cover; maybe that helped.
