Need Help With Fondant!

Hello,

I'm new in the cake design business and i'm experiencing some troubles with fondant figures.

I've tried to make marshmallows fondant and i've bought a comercial fondant.

But they both become sticky and they brake easily. The comercial fondant that i bought has a humid texture. I've added icing sugar to achieve a more easy to mold texture.

Do you have any ideas about waht might be the mistake that i'm doing? Because i saw some fondant figure making videos on youtube and they always have a non-sticky, easy to mold fondant.

Please, if you have any idea, answer me.

I like to use Wilton fondant for figures and molding. It doesn't have a great taste to cover a cake in, but I find that if I mix Wilton fondant with gumpaste, it gives me a great medium to work with. Doesn't dry too fast, not too sticky, holds colors well.

You can add some Tylose to it, and it will be more like gum paste. It will dry a lot faster and harder. HTH

I'll second both of those ideas. I use Wilton for some stuff that won't be eaten because it works up nice. But I have used Satin Ice and Fondarific for the same. I use tylose powder kneaded into the fondant to help it dry a bit harder.

I've seen a lot of tutorials that say to do a 50-50 mix of gumpaste and fondant, it doesn't dry too quickly, leaving you time to do your molding and sculpting, but it dries quicker that fondant giving you a sturdier end result. Good luck!

I use 1/2 fondant 1/2 gumpaste. I gives me plenty of time to mold but then dries hard. It works great for me. I have used Wilton fondant and gumpaste and Satin Ice fondant and gum paste. They both work great!

I dont find wilton or satinIce fondant in Portugal. I've bought some from a French company called Masterline. I don't know if it has the same consistency as those.
