My best friends birthday is coming up, and I am in need of some non dairy, but great recipes. She loves carrot cake, but she can't have the cream cheese frosting anymore. I exclusively use ganache or IMBC, but she can't have those either. I really don't care much for Crisco based icings. I'm a little stumped here.

I'm just recently on a dairy free and gluten free diet, so am researching recipes for dairy free cake ingredients.

My plan at the moment is to use non dairy margarine in place of butter to make buttercream. I'm in the UK, so I'm using vitalite, but sorry I can't help with brand names in US or Canada.

I hope someone has a more interesting alternative recipe for us! Will be watching this one!

Look for vegan cake recipes, or just substitute non-dairy margarine (the solid kind) and non-dairy milks for normal milk & butter in your standard recipes. No non-dairy buttercream is going to taste as fab as those with butter in, but then it's not for your consumption, your friend will be used to things with a 'different' taste thumbs_up.gif !

Ditto.

Also there is a Spectrum shortening that is totally Vegan for icing. I have used it quite successfully for shortening based recipes. There is also the added bonus of not having any transfat. And Earth Balance puts out a "butter" that is totally vegan and tastes good too. I have used it for icing, but it reacts more like a cinnamon icing IMO. But it is worth experimenting.

As a side note I made vegan cupcakes and my son took them to work. He didn't even tell people they were vegan (they did have butter based frosting on top). They were devoured in no time. I am adding them to my store menu, only I will use vegan based frosting this time. thumbs_up.gif

Tofutti brand makes non dairy cream cheese, I never tasted it, but I have heard its really good in icing. http://www.tofutti.com/btcc.shtml

I use toffuti sour cream and cream cheese in all my cake baking.... they both work just fine!

I was dairy free for a year, because my son had a Milk Protein intolerance. This was my go-to cake recipe.

It's a chocolate cake and no one had any idea it was dairy free. For frosting, I used American Buttercream and used Spectrum shortening and Almond Milk as the liquid, again no one even guessed there was no butter in it!
